Quinoa Vegetable Soup

I'm a sucker for soup. I could honestly sit down and eat bowl after bowl of a good soup. With this soup, it really doesn't matter how much I eat because pretty much every ingredient is good for me.

Ingredients:

1 ½ cups cooked quinoa

1 onion, diced

I cup chopped celery

1 15oz can of diced tomatoes, unsalted

1 medium zucchini, sliced into coins

2 carrots, cut into coins

1 cup green beans, broken up

5 medium mushrooms, sliced

1 clove of garlic, minced

½ bell pepper, diced

1 32-ounce box of vegetable broth

1 teaspoon thyme

2 teaspoons dried bay leaves, crumbled

1 teaspoon sea salt

1 teaspoon pepper

½ cup fresh basil, chopped

3 tablespoons olive oil

Directions:

1. Add olive oil to a pot and add onions and mushrooms and cook for 5 minutes.

2. Add ginger and cook for 2 more minutes.

3. Add the rest of the veggies and cook for 5 more minutes.

4. Add everything else (except the quinoa) and cook for a half hour. The soup is done when the vegetables are tender.

5. Stir in the cooked quinoa and serve.
